At the heart of the Global Gardens site in Cardiff, a central apple tree produces an abundant harvest each autumn, much of which falls to the ground and goes to waste. While some neighbours collect the fruit to make tarts and jams, the surplus remains unutilized.
The Pavilion addresses this surplus by creating a space where the apples can be pressed into juice or fermented into cider, transforming waste into a shared resource. Designed as a circular process, the pavilion guides participants through every stage of production, from washing and pressing to juicing and fermenting.
The structure culminates in an open pavilion space with seating and standing areas, inviting participants to savour the results of their work while overlooking the apple tree and surrounding site. By combining functionality with conviviality, the pavilion fosters a sense of community, celebrating the simple act of turning overlooked abundance into collective enjoyment. This adaptable idea could easily be transported to other allotments or community gardens across Cardiff and beyond, offering a scalable solution to fruit waste and communal engagement.
